A Vegan Carbonara Pasta With Coconut Bacon

Ingredients:

  • 3 1/2 cups whole wheat fettuccine  
  • 1 cup cashew nuts  
  • 1 1/3 cups oat milk   
  • pinch of nutritional yeast  
  • pinch of salt  
  • 2 tbsp olive oil 1 clove garlic; chopped  
  • 1 Onion; chopped handful of mushrooms; chopped    
  • Coconut bacon
  • 1 1/2 cup diced Red Apple 
  • 1 cup unsweetened coconut flakes
  • 3 tbsp sesame oil
  • 2 tbsp Olive oil
  • 1 tbsp smoked paprika
  • 1 tbsp agave syrup
  • 1/2 tsp liquid smoke
  • 1 pinch salt


Step-By-Step Instructions:

1.  Cook the pasta in boiling water.
2. To make the sauce, blend the cashews, soy milk, nutritional yeast and salt.
3. In a pan, heat the olive oil and add the garlic, onion and mushrooms. Let it cook until the mushrooms are golden. Add the sauce, mix well. Taste the seasonings.
4. Add the pasta and toss well. 

Coconut Bacon 

5. Preheat the oven at 150 ºC. Line a baking sheet with parchment paper.   

6. In a bowl, toss well all the ingredients.   

7. Bake for 10m until brown. Watch carefully so that it doesn’t burn.   

8. Let it cool for 10m.

9. Start digging!
